Our third release of Top Shelf is a beautiful washed gesha from our good friends Pepe Jijon and Modcup! This is an incredible presentation of washed gesha coming from Ecuador that showcases refined processing and terroir and a wonderful expression of what cleanly processed but expressive coffee is. Please let this coffee rest before brewing and read below for our tasting experience!
Hot: White florals forward, layered yellow fruit acidity, jasmine and lemon tea, clean finish. Florals and sweetness are main components when hot. Finish is clean and delicate.
Warm: Refined acidity. Vibrant citrus, florals become very structured, juicy finish, very clean. This is a HIGH definition coffee so please see how the acidity articulates here. We find very layered and acidity that presents as citrus and lemon but all tied to white florals.
Cool: Acidity becomes super structured. Florals become even louder and the finish is very clean and jasmine tea like. The acidity presents as citrus and lemon-like with a clean and delicate finish.
Recommended Rest: 6-8+ weeks. We got this coffee with a 3/17 roast date and rested it for you guys so when you receive it you will be ready to brew! We expect this coffee to really open up around 8 weeks off roast and highly suggest you save some.
